Last week we had a variety of black bean recipes on the menu.
And man, have I been craving this one since making it last Tuesday! It’s so delicious!
I think I’ll be adding this to the menu again for this week coming up, maybe with some more veggies added into the mix. Some red peppers and some homemade salsa on the side… Mmm. Yum!
Unfortunately, I had forgotten to take some photos of the process so you’ll have to just imagine the awesomeness that is in this!
1 1/2c black beans, drained and rinsed
1/2c frozen corn
1/2 medium sized red onion, diced
3 medium roma tomatoes, chopped
1/4-1/3c cilantro, chopped
1c cheese, shredded (I used a mix of marble and mozzarella)
1/2tsp taco seasoning (I make my own but I imagine a pre-made mix would be similar amounts)
Combine everything in a bowl.
Place a tortilla on a frying pan over medium heat. Scoop on some filling onto half of the tortilla. Fold in half and then flip when toasted.
It’s simple. And it keeps well if you put just the filling into the fridge overnight. You can prep the filling anytime during the day or the night before and it takes ten minutes to throw it all together and cook up enough for everyone. They’re very filling too!
It’s definitely going to be added to this weeks menu again – somewhere amongst the turkey leftovers!
